Cauliflower and Black Bean Tacos (vegan, gluten-free)

If you don’t love tacos then we can’t be friends. I’m serious! I really love tacos! I love to show you plant based options that are downright delicious! If you want to add some fish or chicken to this recipe, then that’s cool too! So we are taking roasted cauliflower and cumin & chili powder spiced black beans to the next level here. Be prepared for a flavor explosion. I hope you enjoy these!

Makes 8 tacos

Ingredients:

  • 1 medium cauliflower

  • Two 15 oz cans of black beans

  • 8 tortillas

  • Ingredients for the roasted cauliflower

    • 1 Tablespoon avocado oil

    • 1 teaspoon ground cumin

    • 1/2 teaspoon freshly ground black pepper

    • 1/2 teaspoon sea salt

    • 1/4 teaspoon paprika

    • 1/4 teaspoon cayenne (this is optional, it does add a good bit of heat)

  • Ingredients for the black beans

    • 1 bay leaf

    • 1 teaspoon cumin

    • 1 teaspoon chili powder

    • 1 teaspoon dried oregano

    • 1/2 teaspoon freshly ground black pepper

    • 1/2 teaspoon garlic powder

    • 1 cup water

  • All toppings are optional: red cabbage, shredded romaine lettuce, avocado, guacamole, salsa, hot sauce, tomatoes

Method:

  1. Preheat oven to 400 degrees. Line a large baking pan with parchment paper.

  2. Mix together the 1 T oil and the spices for the cauliflower in a large bowl.

  3. Wash the head of cauliflower and pat dry. Cut into small bite size florets. Add florets to spices and oil and stir thoroughly. It will seem like not enough oil, however it is enough. Just stir it really well. Add cauliflower to baking sheet. **Alternatively, you can skip mixing the spices and oil and save yourself time and washing the bowl. Just place the florets directly on the pan, spray some avocado oil on, then sprinkle all spices on top.

  4. Place cauliflower in 400 degree oven for 35 mins or until slightly golden and tender.

  5. Meanwhile drain the 2 cans of beans and place them in a saucepan. Add the 1 cup of water and spices. Bring to a boil then reduce heat to simmer.

  6. While everything is baking and simmering, prepare your toppings.

  7. Once the cauliflower is roasted, turn the unit off for the beans and start assembling your tacos!
